Guilty-Free Watermelon Mojito

What's more refreshing on a hot sunny day: a mojito or watermelon? Ummm... what about both together? Yes, please!


This low-calorie guilt-free cocktail combines the best of both worlds. This 4th of July weekend enjoy all the things you love AND now... GUILT-FREE! Now remember, everything in moderation. Healthy is a relevant word, so moderation is always your best friend.

On to the recipe.

It's easy, it's simple, and your guests will love it! (and so will you!)

Ingredients:

  • 1 cup watermelon, seeded roughly chopped - 47 calories

  • ½ lime, juiced - 5 calories

  • 4 mint leaves - 0 calories

  • ice - 0 calories

  • 1 fl. oz. Bacardi Rum (we recommend the lower calorie ones: Anejo, Gold, Superior and Vanilla. Razz is somewhat higher, with 72 calories per fluid ounce.) - 66 - 76 calories

  • club soda - 0 calories


Instructions:

  1. In a blender, process watermelon until liquefied. Pour into a glass.

  2. In a small bowl, muddle together the lime juice and mint leaves. Pour over the top of the watermelon. Fill the glass with ice and top with rum and club soda.

  3. Garnish with mint leaves and watermelon wedge if desired.

Note: If the water melon is not to sweet, add ½ tsp. of organic cane sugar.
