Healthy Thick and Fluffy Flourless Banana Smoothie Pancakes


These super thick and fluffy flourless banana smoothie pancakes are a filling, healthy, satisfying and easy breakfast recipe! Made with no eggs, butter, oil or flour, these banana smoothie pancakes are naturally gluten free, vegan, dairy free and come with a sugar free option!

Total Time: 20 min

Ingredients:

  1. 1 heaping cup rolled oats (gluten free, if needed)

  2. 1/4 cup milk of choice (non-dairy, if needed)

  3. 1 ripe banana

  4. 1 tbsp baking powder

  5. 1 tbsp apple cider vinegar

  6. 1 tbsp maple syrup*

  7. Optional: 1 tsp vanilla extract or ½ tsp cinnamon

* Can switch for a liquid stevia sweetener of choice- However, it won't be as fluffy.

Serves 1

Instructions:

  1. Combine all the ingredients in a blender. Blend until smooth.

  2. Allow the batter to rest for 5-10 minutes, giving the oats time to absorb liquid and thicken.

  3. Preheat a nonstick pan over medium high heat. Once hot, pour in about ¼ cup of batter.

  4. Cook for 1-2 minutes or until you can easily slide a spatula underneath. Flip. Cook for another 1-2 minutes on the second side.

  5. Repeat until all the batter is used up.

  6. Add your toppings of choice and enjoy.
